I am sure you all have a version of what my kids refer to as "Valley Dinner." They said they named it that because when we lived in the Valley we were so poor it was what we ate most of the time.

We sauteed some onion and mushrooms (if we could afford them), along with some ground meat (whatever we had), added corn, olives, diced canned tomatoes and anything else that looked like it might work and might spoil if we kept it any longer. Meanwhile cooked up any pasta that was in the cupboard. Stirred it all up together and poured it into a cassarole dish, topped with lots of cheese and baked it until bubbly.

I laugh now because my girls fix it for their families often!
